As much as I love Taco Bell for a quick meal, anyone and I mean anyone can replicate their dishes and make them taste WAY better than you can buy them for!

Best cheese for cheesy roll ups

You need good melting cheese to make bomb cheesy roll ups. I love shredded white Monterey jack cheese, Colby jack, or the Fiesta pack at Walmart.

Shredded cheese cooks fast, making this an easy, quick, perfect finger food.

If you want to go the extra mile, go ahead and locate your nearest Latin Food Market for fresh cheeses and soft tortillas.

Those melt super easy and are perf for cheesy roll ups.

It’s a great way to introduce your baby or toddler to other flavors and expand their pallets too.

best tortillas to use

Corn vs flour tortilla

Use small street taco-style tortillas or tortillas roughly 8 inches.

You are welcome to use whole wheat or corn tortillas as well.

The corn tortillas are less flexible and better for making heavy street tacos.

It’s up to you whether or not you want to make homemade tortillas.

Griddle Assembly

If you are using a griddle, place the tortilla down and let it warm up. Then place your cheese of choice on top.

Let the tortilla warm up enough to melt the cheese.

Then take it off the griddle and let it cool for a minute or two before slowly rolling it up.

Equipment

  • Non Stick Cooking Spray

Ingredients

  • 2-4 8-inch Flour Tortillas
  • 1/4 cup Shredded Monterey Jack Cheese
  • 1/4 cup Shredded Sharp Cheddar Cheese

Instructions

  • Prep the Tortillas: Lay the flour tortillas flat on a clean surface.
  • Add the Cheese: Sprinkle a generous amount of both Monterey Jack and sharp cheddar cheese on the tortilla. Be generous but also ensure you don’t overfill them, as this can cause the cheese to spill out during cooking.
  • Place in Microwave: Flat on its back with the cheese face up, you can place it in the microwave for about 15-30 seconds on a mircowave safe plate.
  • Roll Up: Once the cheese is melted, slowly roll up your tortilla into the traditional cheesy roll!
  • Serve: Serve with sides of sour cream, Taco Bell Sauce and guacamole.
